Whites tend to be too thin tasting for my hobo palate. Plus it always seems to be served too chilled. Yes, yes, I can just wait for the temperature of the room to lower it, but I'm complaining here! Anyway, red wine is my self-medication. Yeah, the last months I've amped up my production so that I can let more bottles age. Last summer I set aside a few bottles to age for six or seven months and the effect was noticeable. Amazingly smooth. I've got about 100 bottles available, so this next batch will come close maxing out my bottle supply. Once you've dealt with the cost of the initial equipment, the booze is cheap—about $1.50 a bottle.

Pinot Noir is a favorite, but to me nothing will beat Sebastiani's '08 Cabernet. That was a nice, peppery bastard. The Boss got me making Cab when she got sick of Shiraz. It took me awhile, but I came to enjoy that as well. The only red that I refuse to make is Merlot. I have no taste for wine. I like the flavor it can impart as part of cooking but just cant find one that I like to just drink.

If you've never tried Shiraz, give that a shot. It's got a really bold taste and generally higher alcohol content. That's still my go-to wine because I prefer the buzz to crap like subtlety. I really need to start drinking out of a paper bag …
