Thats funny because Im sure the gravy thing here has to be an outgrowth from poutine, perhaps for poorer folks who dont have the luxury of cheese.

I'm good with vinegar and heart attack's worth of salt. The only way I could do mayo with fries is if it's, like, sriracha mayo. I've had that on sandwiches and it's sublime.

I was a regular at Lou Macari’s chippy in Manchester back in the 90’s. Whilst in Manchester I liked to experiment with the local cuisine so I ate chips and gravy, chips and curry sauce. Have to say both were good however you can’t beat chips with salt and vinegar.
