A more complex and therefore darker take on the Star Trek mythos. The Federation is shown to have a lot of bad actors operating within, and even the good guys engage in questionable behaviour to achieve their ends. So it ends up handling more difficult moral questions than most other Trek episodes. It also benefits from being a complete story, not just mostly self-contained episodes. And, imo, the characters ended up being the most fleshed out of any series so that I was actually invested in them. They went beyond character function into something more complex and often contradictory. Honestly, I'd be stunned if you didn't love DS9, but you do have to watch from the beginning.

The darker take isn't what does it for me. It's the characters and their development. Best of all of them.

I downloaded a fairly decently torrent of Star Trek TNG based on the remastered version so I'm starting a TNG rewatch. I think when I have money, I'll look into buying the remastered blurays.

Every time you want to fast-forward, take a drink. Every time you want to turn it off, take a gulp. DS9 episode "Rapture" is on right now, which is a personal favourite. Sisko gets zapped by some gizmo and starts having visions that lead him to discover an ancient Bajoran city. He also gains prophetic insights that lead him to urge Bajor to turn down Federation membership. However, his physical health suffers because of this ability and Bashir operates on him, saving his life but taking away the visions, just as Sisko believes he's close to understanding everything. It's a favourite of mine because Sisko's experience is not unlike seizures that some epileptics have. I've had seizures where I've come back believing I was on the threshold of understanding some great cosmic truth, but within 30 seconds or so the whole feeling evaporates. To those who believe in the divine, I can fully understand them believing they've had a revelation. Anyway, this episode is drenched in epileptic hoo-ha.
