Also, if you’re getting eggs from chickens raised in a clean environment and fed decent feed, the salmonella risk is fairly low. It’s like 1 in 20,000.

Huh. I just assumed you have to refrigerate or they'd spoil, like milk or yogurt, but I have no reason to believe it's required. Just something I was taught, I guess.
