I suspect the actual reason for diminished flavor is either:
1. Side effect of the adding of brighter color or shelf stability. Possibly the phenotypes are linked.
2. The vast majority of people prefer bland food and hate vegetables with a strong taste.

Carrots are actually purple, the Dutch genetically modified them to be orange for their royal family.

I’d suggest some of the loss of flavour is due to the sterile processing of the crops?
Euumas mentioned tomato’s which is true. The scent from a tomato (as with most crops) is in the leaves and stalk which are usually removed and the fruit cleaned.
If you have ever grown your own tomato’s you will know how strong the scent is and how much more flavour there is in the fruit.
Like most foods no scent no flavour.

One was the most likely. I’ve just noticed lately on social media that more and more people I assumed were grown adults eat like five year olds. All bland foods and safe choices devoid of green.

I’m specifically talking about people I KNOW are comfortably well off and not in food deserts. Although that is a huge problem in itself.

This is a great point. It's a nasty cycle and I even saw it in my post-divorce life as a now single father of 2 small children. Food choices at the store were often based on how much things cost. Given the choice between different types of bread - I'd always go with cheaper over more nutritious. I obviously knew what I wanted to buy, but I also knew a dollar could only be stretched so thin. We spent several years existing on cheap food versus nutritious food and thankfully as I've gotten back on my feet - that has changed.

I truly feel for those trapped in that cycle, however. It isn't just being forced into buying cheap food because that's all you can afford - how many people are simply stuck? You won't find a Whole Foods or a Trader Joe's in the "crummier" neighborhoods of Milwaukee. We have really bad public transportation. It isn't easy (or encouraged) to take the bus out to one of the suburbs to grocery shop.

Far and away, our diet was at its worst when we were in grad school in NC, living basically poverty line. Some decisions just made themselves. :meh:
