Confession - I kind of have a soft spot for Michael Anthony. He endured years of abuse from both the evil Van Halen brothers and DLR, and he is supposed to be one of the nicest guys in the world. I had a ‘business meeting’ in Lisbon. As a big fan of pork scratching I was more than happy with this and told them how much I loved it and that I was brought up eating scratching that came straight of the pig farms.
However to my horror when the pigs ears came out they weren’t fried or grilled they were whole and boiled. They looked like they had just been sliced off and as they were boiled the texture was soft and rubbery and the hairs and everything still attached.
