I had a ‘business meeting’ in Lisbon. They suggested we meet at the Stadium of Light for lunch as they were serving pigs ears in the restaurant which was a traditional and much reverted dish (especially amongst Benfica fans).
As a big fan of pork scratching I was more than happy with this and told them how much I loved it and that I was brought up eating scratching that came straight of the pig farms.
However to my horror when the pigs ears came out they weren’t fried or grilled they were whole and boiled. They looked like they had just been sliced off and as they were boiled the texture was soft and rubbery and the hairs and everything still attached.
