I don't really care for what i've heard from the Stones other than Under My Thumb and Paint It, Black...is there anything to recommend based on this that I wouldn't have already heard on "classic rock radio?"

Check out Aftermath, Between the Buttons and Their Satanic Majesties. In my opinion, their 3 most musically adventurous albums. Brian Jones is really in his element - playing pretty much every instrument under the sun and Jagger/Richards were really coming into their own as songwriters.
I prefer the UK versions of both Aftermath and Buttons. Their Satanic Majesties only came in one version. Also - the mono versions sound incredible. I know they have them on Spotify.

A great somewhat lost track from that era is Ride On, Baby. It's on the Flowers comp (and was originally scheduled to be on their aborted "Could You Walk on the Water?" LP that became "Aftermath").
Lyrically, a pretty nasty put down of a pretty girl more interested in partying and living hard than anything more substantial. Some great couplets: "You walk up to me, and try and look shy, the red round your eyes, says that you ain't a child" and "Laugh it a bit, give it a try, if I'm not impressed, you can still cry" as examples. It's definitely not a "nice" lyric - but seems to say something about the darker edges of the Swingin' London of the 1960's.
Musically, a tour de force from Brian Jones: 12 string guitar, harpsichord, marimba, autoharp, and congas. Keith provides a great rhythm part and Jagger's delivery is perfect - managing to sound both sneering and dismissive at the same time. Stew's piano is another highlight.
